box (15.25 oz) Betty Crocker™ Super Moist™ cake mix (any chocolate flavor)

box coated chocolate candies (like Reese's Pieces candy) for the nose

container (12 oz) Betty Crocker™ Whipped Frosting Chocolate

    Combine cake mix, water, oil and eggs. Follow the directions on the box to mix batter and bake in mini muffin tins sprayed with non-stick baking spray. Remove cupcakes from oven to a cooling rack and allow to cool completely before proceeding.

    Frost each mini cupcake top with the whipped chocolate frosting. Dip two mini pretzels in frosting, then place them on the cupcake in the antler positions. Push them in so they will stay upright.

  • 3

    Add two candy eyes and one coated candy piece for the nose. Continue with remaining cupcakes.

Preheat oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.

Combine 9 tablespoons butter, white sugar, and vanilla extract in a large bowl beat with an electric mixer until smooth and creamy. Add eggs one at a time and beat until well combined. Fold in half the flour and 1/4 cup milk and stir to combine. Repeat with remaining flour and milk. Spoon batter into the prepared muffin cups, filling each 3/4 full.

Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 18 minutes.

Remove tin from oven and cool on a wire rack for 5 minutes. Remove cupcakes from the tin and cool completely on a wire rack before decorating, about 1 hour.

Combine confections' sugar, 1 tablespoon butter, and 1 tablespoon milk in a large bowl beat with an electric mixer until smooth and creamy. Thin frosting with a little milk or water, if necessary. Add food coloring and stir until frosting is uniformly brown. Add more food coloring, 1 drop at a time, until frosting is the color you like.

Spread a thin layer of frosting on top of each cupcake. Break vanilla cookies in half. Place a cookie half on each cupcake as a mouth. Use a bit of frosting to "glue" a jelly bean onto the cookie for Rudolph's red nose. Stick 2 candy eyeballs into each cupcake. Break off a piece from each pretzel so they look like antlers and stick 2 into the top of each cupcakes. Shape chewy candies into ears and stick 2 into the sides of each cupcake.

Combine sugar and 1/4 cup Cinnamon Sugar Butter Spread in large bowl beat at medium speed until well mixed. Add buttermilk, 1 ounce melted chocolate, egg and vanilla continue beating until well mixed. Reduce speed to low add flour, baking soda and salt. Beat until well mixed. Add boiling water continue beating until smooth.

Spoon about 1 tablespoon batter into each prepared muffin pan cups. Bake for 10 to 12 minutes or until toothpick inserted in center comes out clean. Cool completely.

* Substitute 1 teaspoon vinegar or lemon juice and enough milk to equal 1/4 cup let stand 5 minutes.

Cooks Tip: To make ahead, bake cupcakes as directed cool completely. Place unfrosted cupcakes in resealable plastic freezer bag. Freeze up to 2 months. Let stand at room temperature until thawed. Prepare frosting as directed. Frost cupcakes.

1 mini vanilla wafers (snout)
1 red or brown M&M (for the nose)
2 large pretzels (antlers)
2 white M&M's (look for the holiday mint flavored M&M's or use a white chocolate chip turned upside down)
1 mini tootsie roll (ears)
black decorating gel (eyeball)

Directions: Generously frost the cupcake with chocolate frosting. Place the mini vanilla wafer near the bottom center of the cupcake. Place a small amount of the frosting onto the back of the red or brown M&M and attach it to the top center of the vanilla wafer. Break pretzels as shown below ( I over-broke several pretzels before I got it just right, so you may want to be prepared with extra pretzels). Attach the pretzels at the top of the cupcake, pointing diagonally outward. After the pretzel antlers are arranged, add the M&M eyes into place (for me it was directly above the vanilla wafer snout). Slice the tootsie roll in half lengthwise, then using the warmth of your fingers mold the tootsie roll halves into ear shapes. Attach the ears just outside the pretzel antlers. With the black decorating gel, add a little eyeball in the center of each white M&M. Admire the cuteness!

Beware, these are somewhat fragile with the pretzel antlers in place, so if you're traveling with them, you may want to think of adding the antlers after you're there (or using much smaller pretzels).
