These muffins are a delight. fluffy inside, fragrant and with a crunchy topping on top.

To prepare the topping, the pumpkin seeds are put in a mortar and crushed a little. This operation can also be done on the robot, but be careful not to powder them.
Then put the crushed seeds in a bowl together with the other topping ingredients (brown sugar, cinnamon, flour and butter) and mix lightly with your fingertips, incorporating all the ingredients in the butter. It must be a kind of inhomogeneous and crumbly dough, like crumbs.

Recipe 1: pumpkin pie

6-700 grams of pumpkin grated, put in a thick-bottomed saucepan with three tablespoons of sugar and a handful of large, golden raisins. Saucepan over low heat for a quarter of an hour.

You buy pie sheets, put three sheets on top of each other, grease them with a little butter, put the pumpkin on top of the sheets (this amount of pumpkin is enough for two rolls) and roll.

Bake the pumpkin pie for 20-25 minutes at 180-190 degrees Celsius.

Powder with sugar. It's that simple.

Recipe 2: pumpkin muffins

Flour, egg, sugar, pumpkin. But let's take it methodically:

Put in a bowl three eggs (at room temperature), two tablespoons of flour, two tablespoons of sugar, a teaspoon of anise, half a sachet of baking powder with saffron. Melt 50 grams of butter in a saucepan and let it cool a bit.

Mix all the above ingredients well. Add to the composition a tablespoon of grated pumpkin and soak for a quarter of an hour on low heat with a little sugar (some pumpkins are sweeter and require less sugar, you are encouraged to taste the pumpkin before adding sugar). Mix well.

Put the mixture in muffin tins. The amount of the above composition is enough for eight small or four large muffins.

Bake the muffins at 180 degrees Celsius, 15-18 minutes. The oven must be heated beforehand.

Two-mouth muffins. Very good, literally.

Recipe 3: pumpkin cake (maybe you can help me with a name)

Here you start working like a sponge cake or a cake (it looks like a place).

Mix six egg yolks well with three tablespoons of sugar and one tablespoon of oil. You get a slightly frothy cream.

Beat six egg whites with three tablespoons of sugar. You get a hard foam.

Prepare 200-250 grams of grated pumpkin (mix the pumpkin with a tablespoon of sugar, over low heat then drain the juice from it, possibly leave it in a sieve for half an hour, to lose more liquid).

Mix the egg yolk foam with the egg white foam.

Add six tablespoons of flour (you can put 8 or 10 if you want a thicker cake), a sachet of baking powder with saffron, a teaspoon of anise seeds. Stir gently until smooth. Add the pumpkin and stir again.

Grease a pan with butter (it is better to put a baking sheet, it is safer), pour the composition into the pan and bake it for 35 minutes at 180 degrees Celsius, in the preheated oven.

The pumpkin will go to the bottom of the tray, it's inevitable. After baking the cake and it cools, you turn it upside down and the pumpkin reaches the top. Decorate with pine seeds and sage (you can without a word that is very good). If you choose this shape, you can get 12-14 servings of cake from the above quantities.

You can choose to give the cakes a round shape. Here you lose a little from the edges (of course, you can eat the edges, no one stops you) and you get eight or ten servings, depending on the diameter of the ring with which you cut the shapes. Powder with vanilla sugar.
