All but absolutely all the sweets from then I prepare them and now, they are the most beloved on my blog, I learned to prepare them from my grandmother, then some from my mother and now because this is the course of life I prepare them with my feet my, the big one is already quite skilled, I hope he will inherit me :).

One of the beloved recipes that I haven't posted on the blog yet is the one with plum dumplings, dumplings as we call them, this time the dough is with cottage cheese, much fluffier, a kind of tasty papanasi stuffed with flavored plums then roll in pemet, sugar and ground walnuts.

Grandma used to make cow's cheese at home, and I made a period for the children, so you know it's quite easy, but as we are always struggling with time, I gave up and use the cheese I bought. It is important (as with all recipes with cottage cheese) that it be as fat as possible, 20-25% fat.

Otherwise you do not need many ingredients other than the basic eggs, semolina, breadcrumbs, flour, sugar.

The recipe is simple and quick and reading it you will see a little trick that will help all dumplings look the same, valid for papanasi.

You can prepare it with children just like me, so it will be a double joy, they will have fun modeling with you.

Ingredients for about 21 pieces:

  • 500g cow's cheese as we write fat minimum 20-25%
  • 50g gray
  • 2 eggs
  • 20g pesmet
  • 50g flour for composition + approx. 70g for modeling
  • 2 sachets of vanilla sugar
  • grated lemon peel
  • plums whole or half small stalks if they are larger
  • sugar

To cover the dumplings:

  • 200g pesmet
  • 50g butter
  • 60g sugar
  • 1 teaspoon cinnamon
  • optionally a tablespoon or two of ground walnuts

You also need a larger diameter pan, water and salt.

First drain the whey cheese well, then put it in a larger bowl and crush it with a fork. Add the eggs, flavors, semolina, breadcrumbs and flour one at a time, mixing well after each one.

We get a slightly sticky dough that we let sit for a while until we prepare the plums.

We wash the plums well then if they are too big we cut them in halves or quarters. Put sugar in a smaller bowl.

Fill the pan or pot 3/4 full with water, add a little salt and put it on the fire, in it the dumplings will boil.

Sprinkle flour on the work surface, turn the dough over and shape it into a thicker roll that you cut into slices (you got it, that was the secret to making all the dumplings come out the same :)

Here the helpers come in, put a little flour in your palms, a slice of dough, spread it lightly then put in the middle the piece of plum, a little sugar and gather the edges and then shape a ball. The main chef explains it to you as you see in the video :)

Do the same with the rest of the dough.

Bring the dumplings to a boil when the water boils.

They are cooked when they rise to the surface, ie in a maximum of 5 minutes.

Remove the dumplings with a foam paddle and place on a plate.

Prepare the breadcrumbs in a frying pan, heat approx. 50g butter or oil and add the mixture you stir from time to time until it browns nicely. Turn off the heat and add the sugar, cinnamon, ground walnut kernels and mix gently. Since there is very little sugar in the dough, don't skimp on it now :)

Pass the dumplings through the hot breadcrumbs mixture and then place them lightly on a plate.

My little ones were very excited and excited especially because they helped too (well only the eldest helped me, the little one ate the plums and licked the sugar)

In a bowl add flour mixed with baking powder. Beat the yolks with the sugar until they turn white, and pour the butter and sifted flour over them. Mix the dough well with a mixer with hooks for kneading.

Divide the dough into 3 equal parts. Add a tablespoon of cocoa in two of the 3 parts of the dough. Put the dough in the fridge.
