- In a frying pan over medium-low heat, saute onion and garlic in the vegetable oil. Place tomatoes into onion and garlic mixture. Stir in diced pepper, salt, pepper, basil and oregano. Let simmer for 20 minutes, stirring occasionally. Turn down heat if it starts to stick.

I liked this recipe. This is the first homemade tomato sauce i've attempted. I did puree it afterwards and it thickened up. It's easy and you can add what you like to adjust taste.-07 Apr 2006
I made this while babysitting one night. The parents had left some nasty frozen chicken strips for me to make and I just couldn't feed them such junk. Both girls just loved this! I made this recipe because I'm vegetarian and wanted to use up tomatoes from my neighbor. I thought I would make it and freeze it. But, it was so good that I ate some as soon as it was done. This will not make it to the freezer!-22 Aug 2006

My newest vegan pasta recipe, this might be one of my favorite pasta recipes in the whole list. Rigatoni with spicy Italian vegan sausage and a thick, creamy tomato sauce.
I topped my noodles with some chopped scallions and sesame seeds.
I also enjoyed my noodles plain (see photo below) but I actually prefer it with some tofu, mushrooms, or veggies for that extra bite and protein. Plus, it’s great way to use leftover veggies.

Simple Roasted Tomato Spaghetti Sauce (and Garlic Toast!)
Perfecting a delicious, basic go-to recipe for spaghetti sauce has been on my to-do list for a very long time . Nailing that perfect sauce has required a lot of trial and error. It’s not that making tomato sauce is hard, it really isn’t! But it’s taken me an embarrassingly long time to realize exactly what it was I was looking for: Simplicity.
In the past I often over-seasoned my tomato sauce with too many dried herbs, onion, plenty of different veggies, and sugar. Over the years I've made a lot of sauces that I definitely enjoyed, but I never made one that felt like the one .
After browsing through 'Vegan with A Vengeance' for the millionth time, I read this tip from Isa Chandra Moskowitz:
Pizza sauce is a simple thing, a little garlic, a few herbs. The mistake some home cooks make is overseasoning it with all kinds of Italian spice mixes and whatnot - all it really needs is a subtle hint of herb."
Even though I'm not making pizza sauce, I figured that this logic probably applies to all tomato-based sauces. The tomatoes need to be the star of the show!
This tomato sauce uses a total of 7 ingredients: A variety of fresh tomatoes (grape tomatoes, cherry tomatoes, orange tomatoes, and romas), a hefty splash of olive oil, plenty of garlic, and a little bit of thyme, oregano, and sea salt. The tomatoes are roasted until they’re fragrant, soft and lightly browned. Simmer them with a little vegetable stock before blending them into a light, smooth sauce.
I love serving this sauce on (unrinsed) whole wheat spaghettini noodles, with fresh basil, vegan Parmesan, and of course, plenty of crispy garlic toast.

How to make vegan cheese sauce
There are just 3 basic ingredients – oil, flour and plant-based milk (I used soy milk) to make your basic white sauce.
To that you add some salt, black pepper, dijon mustard, great for adding a cheesy flavor don’t even ask me why but really it works, and some nutritional yeast.
And that might be as far as you need to go to get your perfect cheese sauce flavor! If you want to intensify the flavors a bit more, you can add in some optional onion powder and garlic powder too.

This homemade tomato pasta sauce recipe is made using fresh tomatoes, onion, garlic and basil. Its has been blended into a smooth and creamy pasta sauce that can be enjoyed with many different Mediterranean, middle eastern and Italian pasta dishes.
1 kg Vine Ripened Tomatoes
1/2 Cup Chopped Basil Laves
1 Medium hot red chilli chopped
- Heat the olive oil in a large pot over medium heat.
- Add the onion, chilli and minced garlic and saute until softened.
- Pour in the wine and simmer for 2-3 minutes before adding the vine-ripened tomatoes and seasoning. Cover the pot with the lid and simmer the tomatoes in their own juices until soft and mushy. You may need to mash them down with a potato masher until it starts to resemble a thick chunky tomato sauce.
- Stir in the basil leaves and cook for a further 5-10 minutes on medium heat with the lid off the pot.
- Blend the sauce and store it in a glass jar once cool or use immediately.
