How to make a spinach and ricotta quiche

Clean the spinach, then blanch it for a couple of minutes in boiling salted water. Drain them and let them cool.

In a bowl, arrange the coarsely chopped spinach together with the ricotta, the parmesan, the egg, salt, pepper and a pinch of nutmeg.

Mix everything together forming a single compound.

Roll out the puff pastry, lay it on a baking sheet covered with parchment paper and put the ricotta and spinach filling in the center of the pastry.

Close the puff pastry and brush the surface with a little milk.

Bake the savory pie at 180 ° C in a preheated oven and bake for about 20 minutes.

Let the ricotta and spinach savory pie cool for a few minutes, cut it into squares and serve.
