How to make cheese and pepper pizza

Place the flour in a bowl, add the yeast and just warm water and start kneading.
Then also add salt and oil and continue working.

Once you have an elastic and homogeneous dough, let it rise for at least 2 hours.

Take the dough back, deflate it with your hands and divide it into 4 loaves, spread each loaf on a lightly floured work surface.
Move the disc of dough onto a baking sheet and spread a few ice cubes on the surface, then bake at 250 ° C in a preheated convection oven.

Cook for 8-10 minutes, then open the door and cook for another 1-2 minutes, in order to evaporate the water (the melted ice).
Remove from the oven, sprinkle with pecorino cheese and season with freshly ground pepper, then add a drizzle of oil.

If, like me, you have decided to serve this pizza for an aperitif, cut into wedges with a pizza cutter.
