In a bowl, combine the two flours and sugar.
Dissolve the yeast in a little milk taken from the total and add it to the flours.
Melt the butter, then once it has cooled, mix it in a bowl with the eggs and the rest of the milk.
Start adding the liquid mixture to the flours, then add honey, vanilla and salt, and continue to knead.
Once you have a smooth and homogeneous dough, cover the bowl with cling film and let it rise until doubled (about 2 hours).
Then take the dough and divide it into 16 smaller loaves.
Roll out each block to form a fairly thin rectangle.
Then, holding the rectangle horizontally, place the pieces of chocolate on one side and cut the opposite side into strips.
Wrap the dough around the chocolate, starting from the intact side and ending with the one cut into strips.
As they are ready, place the flutes, well spaced from each other, on a baking sheet covered with parchment paper.
Let rise for another hour, then brush the flutes with lightly beaten egg together with a little milk, and bake in a preheated convection oven at 180 ° C, cooking for 12-15 minutes.
Once out of the oven, let the flutes cool on a wire rack.
Once cooled, serve your homemade flutes.
