THE tiramisu cupcake they are fantastic sweets, which combine the famous Anglo-Saxon cakes with the all-Italian taste of tiramisu. In fact, the base is prepared with a coffee-flavored mixture, while the frosting of the covering is mascarpone with a sprinkling of bitter cocoa as a final touch. I love the cupcakes, but these tiramisu are truly remarkable, seeing is believing: P

Well friends today is a bit messy day, I'm organizing a little party here in the office to greet one of the girls who works with me, today is her last day of work here at Misya, then her heart will take her to move to a other city. So I greet you and I get under, appetizers and cocktails are waiting to be prepared for the aperitif this afternoon, there are 14 of us so there will be a lot to do. How to make cupcake tiramisu
Whip butter and sugar in a bowl until you get a homogeneous mixture with a creamy consistency.
Add the eggs, one at a time, and then the milk slowly.
In another bowl, combine flour, instant coffee and yeast, mix, then add them to the mixture of butter and eggs, working with the whisk until a homogeneous mixture is obtained.
Grease and flour some muffin molds and fill them up to about half of their height, then bake in a preheated convection oven at 180 ° C, cooking for 20-25 minutes.
Remove from the oven and let cool.
Meanwhile, prepare the frosting.
Whip the cold cream from the fridge.
In another bowl, whip the mascarpone with the icing sugar. Then add
also the cream and mix gently, with a bottom-up movement.
Lightly wet the cupcakes with a little hot coffee, then decorate with the mascarpone frosting, using a pastry bag.
Also add a sprinkle of cocoa and serve the tiramisu cupcakes.
