Method
How to make mozzarella sandwiches
Cut the mozzarella (possibly from the day before) into pieces, put it in a food processor together with 50 ml of its water and blend.
Dissolve the yeast in a cup of mozzarella water
Put the flour in a bowl, make a hole in the center and pour in the melted yeast and the mozzarella cream.
Start kneading and mix the ingredients.
Now add about 50-80 ml of mozzarella water. Add it a little at a time, letting it absorb before adding more. You will need to obtain a soft but not sticky dough.
Then add the salt and continue to knead until you get an elastic and well-strung dough (pulling the dough with your hand will have to make the veil, that is, thin until it becomes transparent, without breaking).
Cover the dough with a cloth and let it rise for about 2 hours or until it has doubled in volume.
Take the dough and divide it into blocks of about 50 gr.
Roll out each piece of dough into a strip and roll it up on itself.
Then close it forming a ball.
Gradually place the sandwiches on a baking sheet covered with parchment paper.
Cover the rolls with a cloth and let them rise again for about 1 hour and a half (or until doubled).
Bake in a preheated convection oven at 220 ° C for about 20 minutes or until the rolls are golden brown.
Remove from the oven and leave to cool on a wire rack, then serve.
