Spinach spinach is a quick side dish to prepare at the last minute. When I was little it was the only way my mom could make me eat spinach ... and to say that now I love them in all sauces! The recipe then, as you may have understood, is from my mother and is inspired by the well-known dish four jumps in the pan. I love them ... these homemade, of course;) For those who want to replace the slices with another cheese, I say at the outset that nothing melts like the slices, so I don't know what to recommend as an alternative.

How to make stringy spinach
Clean the spinach by removing the earthy part.
Wash under running water until the earthy residues are completely eliminated, then put the leaves in a bowl for a few minutes in water and bicarbonate.
Rinse the spinach well, then put them still dripping with water in a saucepan and cook for a few minutes or until softened.
Drain the spinach eliminating all the water. Melt a knob of butter in a pan, add the spinach, add salt and stir-fry for a couple of minutes.
Add the grated Parmesan and mix.
Turn off the heat, add the slices and cover with a lid.
After a minute the spinach with cheese will be ready to be served.
