The amusement park fritters are round-shaped yeast dough sweets that are first fried and then passed in sugar. They are usually sold in playgrounds and amusement parks, often also by traveling carts and are of indescribable goodness. I ate them for the first time on a trip to Austria with my parents, we were in the Vienna prater and I remember that there were pancakes and caramelized apples everywhere: they are one of those delicacies that immediately recall childhood flavors. How to make funfair pancakes
Pour the flour into a bowl and put the chopped yeast and sugar in the center, then dissolve both with a little milk at room temperature or just warm.
Add the rest of the water and mix.
Finally add the herbs and butter
Knead until you get a smooth and homogeneous dough.
Cover with plastic wrap and let the dough rise for about 2 hours.
Take the dough, deflate it and divide it into 6 balls.
Squeeze the balls with your hands (leave the edges thicker and very thin in the center) to form discs of about 20 cm in diameter.
Score a small X in the center to prevent them from swelling during cooking.
Heat the oil in a high-sided pan, then fry the pancakes one at a time.
Once the first side is browned, turn them carefully to brown the second side as well.
Once ready, lift them gently, dab them a little with absorbent paper and immediately pass them in a dish in which you have put some granulated sugar.
Serve your funfair pancakes hot!
